
Sausage wrap Ingredients:
1 Flour tortilla (or a tortilla of your choice)
1 tsp of Earth Balance original butter (or a vegan butter of your choice)
Yellow onion
Bell peppers strips (red, yellow, orange, and/or green)
1 Field Roast Smoked Apple Sage Sausage (cut in half but not all the way through)
Violife shredded cheese
Prep:
Field Roast Smoked Apple Sage sausage:
Cut the sausage in half, but do not go all the way through.
Place the sausage in either an oven, conventional oven, microwave or frying pan to cook.
I used a conventional oven and cooked the sausage for about 10-15 minutes (please note that the sausage is already cooked which is why you can microwave it so no matter what method you choose it does not to be cooked for a long period of time!)
Once the sausage has finished cooking, safely remove it from its heat source and put it to the side for later use.
Additional prep (optional because you can eat the peppers and onions raw!):
If you do not have bell peppers and onions already cut you should prep your desired amount before making your wrap.
Instructions for roasting peppers and onions (optional):
I roasted my peppers and onions prior to making the wrap. To roast your peppers and onions:
Take your selected amount of peppers and onions and place them on a baking sheet
Season with: black pepper, Himalayan salt, cayenne pepper, crushed red pepper, garlic powder, paprika, thyme, dill, and cumin. (Seasonings are optional– use as much of each seasoning as you would like to, just make sure they are seasoned to your liking. I can say from cooking this multiple times that the more seasoning the better!)
Use grapeseed oil or an oil of your choice to coat your peppers and onions
Toss and massage your peppers and onions in the oil and seasonings
Evenly spread the peppers and onions on the baking sheet
Place the peppers and onions into the oven set at 425 degrees
Cook for 30-40 minutes or until you are satisfied with how the peppers and onions are cooked
Once finished:
Safely remove your peppers and onions immediately so that it does not burn or overcook.
Let the peppers and onions cool to a safe temperature for consuming and storage
Eat as much of the peppers and onions as you would like and store the rest to enjoy later!
Wrap instructions:
Heat a frying pan using medium-high heat. Let it heat for a minute or two
Place some vegan butter into the frying pan and spread it around using a butter knife or other utensil or safely pick up the frying pan and move the pan in a circular motion until the entire pan is covered in the butter
Once your pan is coated in butter, place your tortilla into the pan
Immediately after place a generous line of Violife shredded cheddar cheese into the wrap; allow the cheese to melt for a few minutes
Once you see that the cheese has begun to melt place your cooked sausage on one side of the tortilla leaving some room near the edge
Then place your peppers and onions into the wrap as well on top of the sausage
Wait 2-3 minutes, and then fold the empty side of the tortilla onto the side with food on it, press down on it for a few seconds
Turn off the eye on the stovetop and use a spatula to remove your wrap from the pan and place it on a heat-safe plate or carefully tilt the pan over a heat-safe plate to remove your wrap from the pan
Let your wrap cool for a few minutes until it is safe to consume and enjoy!
Roasted Broccolini ingredients:
Broccolini
Grapeseed oil (or an oil of your choice)
Black pepper
Himalayan Salt
Garlic Powder
Cayenne Pepper (optional)
Instructions:
Thoroughly wash and dry your broccolini
Spread your broccolini evenly on a baking sheet
Season your broccolini to taste with the aforementioned seasonings and/or seasonings of your choice
Drizzle grapeseed or an oil of your choice on your broccolini to coat them
Toss and massage the oil and seasoning into your broccolini
Spread them evenly on your baking sheet
Place the baking sheet in your oven
Set your oven to 400 degrees and let the broccolini cook for 20 minutes or until you are satisfied with how your broccolini is cooked
Once finished:
Safely remove your broccolini immediately so that it does not burn or overcook.
Let the broccolini cool to a safe temperature for consuming and storage
Eat as much broccolini as you would like and store the rest to enjoy later!
Optional:
Side of grape tomatoes (halved)
Vegan sour cream (brand of your choice)
Sriracha (or hot sauce of your choice)
Homemade Guacamole (I used 4 avocados, ¾ cup of grape tomatoes, garlic powder, onion powder, cayenne pepper, salt, and black pepper– season to taste!)
