Cilantro- lime Rice and Black Bean Bowl

Ingredients:

Ready pack of white rice

Canned black beans (I prefer no salt added canned beans– but use what you have or what works for you!)

Plant-based butter (I use Earth Balance)

Cilantro

Roasted peppers and onions

Broccoli slaw (optional)

Limes

Black pepper

Himalayan salt

Cumin

Cayenne pepper

Garlic powder

Crushed red pepper

Thyme

Dill 

Oil 

Prep: 

See roasted peppers and onions recipe. Once your roasted peppers and onions are done, put your desired amount to the side for later use and put the rest into a storage bowl and put it into the refrigerator for later use.

Open, drain, and rinse your black beans. Place your desired amount of beans in a microwave-safe bowl. Place the rest of the beans in a storage bowl and put it into the refrigerator.  Season the beans you intend to eat to taste and put them to the side for later use.

Microwave your ready rice following the instructions on the package (I use Tasty Bites Organic Basmati rice). Place rice into a mixing bowl. Place to the side for later use. 

Wash and cut your limes (I used 2)  and cut them in half. Place to the side for later use. 

Wash a few sprigs of cilantro and pat dry. Gently pull the leaves from the sprig at their base (they should easily snap off). Put to the side for later use. 

Broccoli slaw (optional)

Ingredients:

Pre-washed and bagged broccoli slaw

Himalayan salt

Black pepper

Garlic powder

Cayenne powder

Onion powder

Oil of your choice (I used grapeseed oil- you do not need a lot of oil about one tablespoon should do!)

Heat an all-purpose skillet and/or a saute pan to medium-high heat

Place your oil into the pan and wait about 3 minutes

Place your desired amount of broccoli slaw into the pan and move it around  so that it is coated in the oil with either a spatula or tongs (I used tongs)

Season your broccoli slaw to taste after it is coated in oil

Continue to toss your broccoli slaw every few minutes. IMPORTANT: Broccoli slaw does NOT take a long time to cook so you need to keep an eye on it as you cook it! It shouldn’t take any more than 10 minutes for your sauteed broccoli slaw to be cooked.

Once your broccoli slaw is done. Safely remove it from the pan and place it to the side for later use.

Building your bowl:

Cilantro-lime rice:

Put your desired amount of plant-based butter into your rice (heat rice for 30 seconds if your rice isn’t hot enough to melt the butter)

Mix your rice and butter together

Season with salt, pepper, garlic powder, and cayenne pepper (or your desired seasonings)

Squeeze your desired amount of lime juice into your rice

Put your desired amount of cilantro into the rice. (To cut your cilantro easily roll your cilantro leaves into a cylinder shape. Then use clean scissors to cut your cilantro).

Mix all your ingredients together. Taste and prepare to your liking.

Black beans:

Season your black beans with rice, pepper, garlic powder, crushed red pepper flakes, and onion powder (or your desired seasonings). Stir seasonings together.

Heat your beans in the microwave (or stovetop– I used the microwave!) to heat your beans. Heat to your liking. 

Once all your ingredients are seasoned and cooked it’s time to build your bowl! Use your desired amount of each food item.

Place your cilantro-lime rice into a bowl or a large plate. Spread it out some to create a good base

Place your black beans on top of the rice

Place your broccoli slaw on top of your black beans

Place your peppers and onions on top of your broccoli slaw

Optional- add some sour cream on top because YUM!…and also for lubrication.
